100% Pure All Natural Guar Gum powder is a plant based thickening agent derived from guar beans that has enjoyed much use in various baking applications. It is especially useful as a binder in gluten free baking. We use this guar gum in all our fresh baked bread products here at Judee's Gluten Free.
Keto friendly guar gum is also an excellent all-purpose thickener for salad dressings, ice creams, puddings, gravies, sauces, cocktail sauce, soups and more.
Like xanthan gum, measure carefully when using guar gum in gluten-free recipes or you may end up with heavy, stringy baked goods.
Bread and pizza dough recipes: Add 2 teaspoons guar gum per cup of gluten free flour.
Cake, muffin, quick bread, cookie, and bar recipes: Add 1 teaspoon guar gum per one cup of gluten free flour.
Sauces and Gravies
1/8 tsp Judee's Guar Gum
2 Tbsp water
1. Add guar gum to a small bowl first, then add water second.
2. Immediately start whisking vigorously to avoid clumping (some clumping is normal and will eventually dissolve on its own over time). Mixture should be a thin consistency so it pours smoothly.
3. Whisk mixture into 1/2 cup sauce, pan drippings or gravy to thicken.
4. Repeat if additional cling and thickness is desired.
*Note: Guar gum tends to hydrate quickly. To slow hydration and avoid clumping a 1:1 ratio of guar gum to oil can be made first.
Mix 1/8 tsp guar gum and 1/8 tsp oil together in a small bowl, then add water second and continue to follow directions above.
Guar gum can also be sprinkled on top of water or other liquids (see video) and whisked or blended to make a thick mixture depending on application.
